The Basque country is justly proud of its cuisine, thought by some to be one of the best in the world.  There is a long tradition of mostly male, gourmet clubs or Gastronomic Societies where members cook for each other and preside over long tables overflowing with wine.

Revuelto is a dish served all along Spain's north coast. It is made from scrambled eggs and  has some regional variations, it can include prawns and turnips. It doesn't look very appetizing but I'm assured its very tasty.

The Basque country is renowned for its tapas bars and in the cities of San Sebastian and Bilbao you won't travel far without passing one.  Dried ham or Jamon de Bayonne is one of the Basque country staples. The seafood dishes include stews of hake with prawns and mussels, calamares or squid cooked in chilli and squid ink. Chillis are a product of the French Basque region and figure in many Basque specialities.  The Chilli harvest is celebrated with a fiesta in the French town of Espellete the fete du piment.

The basque region also produces its own unique cheese idiazábel which has a strong spicy flavour it is made from the milk of the mountain sheep  cured and sometimes smoked.

TXANGURRO RELLENO

The cuisine of the Basque country is varied, with seafood playing an important role.  The photograph above shows an old favourite Txangurro Relleno served in a new way.  This dish is traditionally made from spider crabs which are cooked au gratin usually in the crab shell, this modern twist shows it served in sea urchins
